Totally Vegan Waffles...

I love waffles, and we have an awesome waffle machine. I found this recipe online, and it totally paid off. Waffles were excellent, with a touch of sweetness. I served them with fresh strawberries poached in maple syrup (not pictured).... divine... oh and they freeze nicely as well...
The Recipe:

1 cup all purpose flour
1 cup whole wheat flour
4 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 cups soy milk (I used natura brand, vanilla flavor)
1 cup applesauce (I used an unsweetened type)
2 tbsp vegetable oil
  • Optional: mix in some berries, chocolate chips, whatever you like!
  • Mix the dry ingredients in a bowl with any "mix-ins" (berries, or chocolate chips). Mix the wet ingredients in a different bowl. Combine and mix until just mixed up.
  • Preheat waffle iron and spray with some nonstick oil.
  • Cook according to the waffle makers instructions, which usually means putting about 1/4 cup batter on the iron, closing, and waiting for a light to go out.
